Vegan Fresh-a-cini Protein Delight

Ribbons of raw zucchini and carrots play the role of the flat fettucine noodles; marinara sauce (simple: Hunts Garlic and Herb) replaces the cream-based alfredo sauce, and the protein punch comes from red quinoa and raw cashews. My own creation. Fresh-a-cini

Steps:
1) Start the quinoa (keen-wa) in the rice cooker (1 cup quinoa, 2 cups water) and add a half a clove of garlic, sliced, and a 1/2 teaspoon of salt (or less).
2) Using a vegetable peeler, create thin ribbons of zucchini and carrots and place in a bowl as your base.
3) Heat the marinara sauce.
4) Add quinoa to one side of dish on top of zucchini.
5) Add marinara sauce to the other side.
6) Lace the center with raw cashews.
