Tricking the Tuna Salad

Wanting to use the garbanzo beans I had in the cupboard, I tried an adaptation of this recipe: http://ecovegangal.com/eat/recipes/item/155-vegan-tuna-salad-using-chickpeas-garbanzo-beans.

The short story is that mashed garbanzo beans can resemble the texture of tuna. It’s a pretty short story, because it was an easy and quick recipe to make.

Garbanzo Beans

1 can garbanzo beans
1 tsp olive oil (optional)
1 dash of salt
1 dash of pepper
A bit of mustard (season to taste)
1/3 of a large cucumber (diced)
6-7 raw cashews
Gluten free bread

Mash ingredients together (except cashews and cucumbers)
Add cucumbers and stir.
Toast gluten free bread and spread garbanzo mixture.
Sprinkle cashews on top.
