Sweet and Sour Sweet Potato Part II

(I actually revised this blog post before I posted it, so significantly, that I changed the title to add “Part II.”  Make sure you read until the end.)

Ok, it’s maybe not the greatest name for this recipe but the name captures the unusual character of this dish. Sweet and Sour Sweet Potato

I adapted a recipe I found online and tried something new.

1) Bake one large sweet potato. Scrub, pierce with knife tip several places, and microwave seven minutes.
2) Scoop contents of sweet potato skin into a mixing bowl and add one tablespoon of maple syrup, one tablespoon of apple cider vinegar, and one tablespoon of olive oil. Mash until creamy.
3) Shred a large carrot and sprinkle 1/3 of a cup of raw carrot on top.

It’s orange on orange: sweet and sour sweet potato.

PART II –

Saving the best for last, let me add this revision that I developed when I decided to make this dish again.  I looked up the calories on olive oil and found that at 120 or so calories per tablespoon, I didn’t think the dish really benefited that much from the olive oil, so I reduced the olive oil from one tablespoon to one teaspoon.  I also reduced the apple cider vinegar to one teaspoon, and I likewise used one teaspoon of maple syrup, because I wanted to keep the ratios the same and I really think the sweet potato is sweet enough. The mash was a bit too dry (without the extra oil), so I simply added some water – ultimately making the new recipe a lighter, kinder mouthwatering meal.

My revisions continued as I thought the orange on orange look was too monotone and lacked the element of drama that I wanted from this great-tasting dish.  I added a leaf of iceberg lettuce to make it a wrap and a sprinkle of half walnuts for extra protein and pizzazz.  This was quite an amazing transformation, from a few simple tweaks.  One large sweet potato made three jumbo wraps.  Oh, and don’t shoot me, but I know it’s a yam.  “Sweet and sour yam” isn’t catchy like “Sweet and Sour Sweet Potato Wrap” is.
